Cucumber Mint Soup With Yogurt

Cucumber Mint Soup With Yogurt


  • 1 medium cucumber 
  • 1 cup nonfat plain yogurt 
  • 1 tablespoon lime juice
  • 1 teaspoon of honey 
  • 1/2 teaspoon ground cumin 
  • 1/8 teaspoon salt 
  • 1/4 cup chopped fresh mint leaves (optional)


  1. Cucumber, peeled. sliced lengthwise in half. Utilize a teaspoon to scoop out the seeds. Slice the cucumbers into half-inch-thick pieces, crosswise.
  2. Combine cucumber, yogurt, lime juice, honey, cumin, and salt in a bowl of a food processor. Process while covered until smooth.
  3. Take the soup and place it in a glass mixing bowl. Add chopped mint and stir. Refrigerate for at least one hour after covering with plastic wrap. Before serving, stir. If preferred, add some fresh mint leaves to each bowl as a garnish. Adopt it as your own.
