Ingredients For Mini Strawberry Pavlova

  • Egg white – 4
  • Castor sugar -1 cup
  • Corn flour -1 tsp
  • Lemon juice-1-tsp
  • Vanilla extract – 1/2 teaspoon 
  • Carton cream whipped – 300ml
  • Bananas  peeled, sliced – 3
  • Punnet strawberries, hulled, quartered – 250 g
  • Kiwi fruit peeled, sliced – 2
  • Pulp of 4 passion fruit

Mini Strawberry Pavlova Recipe

Step 1

Preheat the oven to 150 degrees Celsius. Line an oven tray with baking paper.

Step 2

Beat egg whites with an electric mixer until soft peaks form.

Step 3

Gradually whisk in the sugar, one tablespoon at a time, until the sugar dissolves and a stiff, thick, and glossy frosting forms. Beat in cornflour, lemon juice, and vanilla extract.

Step 4

The mixture of spoons on a tray forms a 20cm round, with a slight recess in the middle (spread the meringue inside the circle, elevating the sides slightly over the center to form a crater).

Step 5

Bake for 20 minutes. Reduce the oven temperature to 120 °C and bake for another 45 minutes. Allow the Pavlova to cool completely before turning off the oven with the door ajar.

Step 6

To serve, spread the Pavlova with whipped cream. Top with bananas, strawberries, and Kiwi fruit, and drizzle with passion fruit pulp. 

Tips

  • To achieve maximum egg white volume it is essential to use Clean bowls and beaters. 
  • Use another fruit of your choice and drizzle the Pavlova with melted chocolate if you like.
