Mint Chocolate Chip Ice Cream

Ingredients
- Fresh mint leaves – 2 cups
- (If fresh mint is not available another option is to use pure paper mint extract 1 tsp)
- Milk – 1 cup
- Heavy cream – 2 cups (chilled)
- Sugar – 1 cup
- Vanilla extract – 2 drops
- Salt – 1 pinch
- Green food color – 2 drops (optional)
- Egg yolks – 4 large
- Chocolate chips – 1 cup
Recipe for Mint Chocolate Chip Ice Cream
Step 1
In a large, deep pan, heat 2 cups of mint leaves, 1 cup of milk, and 1 cup of cream on a low flame. Turn off the heat, cover, and set aside for 30 minutes after heating to nearly steaming (do not allow to boil), then turn off and set aside for another 15 minutes.
Step 2
While the mint is soaking in the mixture, pour the second cup of cream into a metal dish and place it over a bigger bowl of cold water and loads of ice cubes. On top of the bowls, place a mesh strainer.
Step 3
Squeeze the mint with a spatula to get the most flavor out of it while you strain the liquid. Add the milk and cream mixture to the saucepan after discarding the leaves and stalks. Simmer the mixture with salt and sugar. Remove the pan from the heat after the sugar has been completely dissolved, stirring constantly.
Step 4
The egg yolks and sugar are whisked in a medium bowl with a pinch of salt, vanilla extract, and food coloring. So, whisk continuously as you slowly pour egg yolks into the hot milk-cream mixture, so that the egg yolks are warmed but not cooked. The warmed egg yolks should be scraped back into the pan.
Step 5
Put the pot back on the flame and whisk the mixture frequently over medium heat, scraping the bottom as you stir, until it thickens and coats the spoon so that you can run your finger over the coating and it will not slide. This might take ten minutes. Then turn off the flame and drain the custard, whisking it into the chilled cream.
Step 6
Place the bowl over an ice bath or refrigerator to cool the mixture for 20 minutes to 30 minutes. Use the ice cream machine as per the manufacturer’s directions for processing the mixture in the ice cream machine. The ice cream should be rather soft after being made in the ice cream machine. Add the chocolate chips gently to the mixture and fold the ice cream slowly.
Step 7
Place mint chocolate chip ice cream in an airtight container and freeze for at least 2 hours, preferably many hours. If it has been frozen for more than a day, you might need to let it sit at room temperature for a few minutes to soften it before serving.
